I continued sending the same email (with a bcc to about 50 others) and they repeatedly didn't respond to any of my questions about the ingredients and their sources in their cheese products. Then I deleted some of the questions, but that shorten email also wasn't acknowledged. Today, they like 95%-98% of US cheesemakers identify the curdling agent in the ingredient panel simply as "enzymes." I suspect these enzymes are genetically engineered until the complete evidence that is false is made public including the name and source of the enzymes and exactly where and how they are being processed or manufactured. The burden of proof is on the industry, which evades this discussion.
I observe that most of ingredient panels on almost all of the American brands say "enzymes." However, at farmer markets, I have actually found "rennet" listed, and when I inquired about that, I was told that rennet was not from an animal. Given that "rennet" is strongly defined with "animal," this ingredient panel deserves to be reported for investigation of rule violation of the content identified on the ingredient panel. Even the European cheeses simply state "enzymes" on at least 95% of their cheeses being sold in the US marketplace, such as at Trader Joe's, but some cheese from Switzerland and Italy's authentic Parmegiana Reggiana cheese do identify "rennet" on their labels.
In talking to a cheese maker, I learned plant-based curdling only occurs from nettles and 2 other plants. They cause the cheese to become undesirably bitter and/or rubbery. This cheese maker was more concerned with the probability that "enzymes" were actually mRNA or bioengineered (GE'd or GMO'd) due to non-transparent nature of their sourcing, their recipes, and their exact location of manufacture. He agreed that this proof needed to come from the cheese industry, but the cheese industry's silence has been overwhelming.
Plant-based appears to be massaged language to distract from microbial enzymes, especially if those are mRNA-based. It is likely that nearly all, if not all, microbial enzymes do not come from only plants, but are synthetically lab-made. Somebody argued with me that microbial enzymes do not have to be synthetic, but failed to prove to me where non-synthetic microbial enzymes are actually made and packaged to cheese-makers.
